Step-by-Step Instructions
- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
- In a large skillet over medium-high heat, cook the lean ground beef for about 7-10 minutes until browned and fully cooked. Drain excess fat.
- Return the cooked beef to the heat and season with onion powder, garlic powder, salt, and black pepper. Stir well for about 2 minutes.
- Layer half of the sliced yellow potatoes evenly in the greased baking dish, followed by half of the cooked ground beef and half of the diced tomatoes.
- Add the remaining sliced potatoes, followed by the rest of the ground beef and top with the remaining diced tomatoes.
- Sprinkle the shredded mozzarella cheese over the final layer of ingredients.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 5 minutes until the cheese is golden and bubbly.
- Let the casserole sit for about 5 minutes before serving. Garnish with fresh parsley if desired.

Notes
Ensure to slice the potatoes uniformly for even cooking. Consider supporting the dish with fresh tomatoes or using vegetables for added nutrition.
