For the Casserole
  • 1 lb Lean Ground Beef Opt for a 90/10 fat ratio for a healthier meal.
  • 2 large Yellow Potatoes Sweet potatoes can be substituted for a touch of sweetness.
  • 1 cup Shredded Mozzarella Cheese Feel free to swap with cheddar or dairy-free cheese variations.
  • 1 can Diced Tomatoes Fresh tomatoes work great for a brighter taste.
For the Seasoning
  • 1 tsp Onion Powder You can use fresh chopped onions for an even bolder flavor.
  • 1 tsp Garlic Powder Try substituting with fresh minced garlic for a more intense flavor.
  • 1/2 tsp Salt Adjust these to suit your taste preferences.
  • 1/4 tsp Black Pepper
For Cooking
  • 1 tbsp Olive Oil Feel free to replace with any neutral oil if desired.

Equipment

  • Oven
  • 9x13-inch Baking Dish
  • Skillet
  • wooden spoon

Method

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
  2. In a large skillet over medium-high heat, cook the lean ground beef for about 7-10 minutes until browned and fully cooked. Drain excess fat.
  3. Return the cooked beef to the heat and season with onion powder, garlic powder, salt, and black pepper. Stir well for about 2 minutes.
  4. Layer half of the sliced yellow potatoes evenly in the greased baking dish, followed by half of the cooked ground beef and half of the diced tomatoes.
  5. Add the remaining sliced potatoes, followed by the rest of the ground beef and top with the remaining diced tomatoes.
  6. Sprinkle the shredded mozzarella cheese over the final layer of ingredients.
  7. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 5 minutes until the cheese is golden and bubbly.
  8. Let the casserole sit for about 5 minutes before serving. Garnish with fresh parsley if desired.
