  1. Start by slicing the fresh pineapple into 1/2-inch thick rings. Set the slices aside while you prepare the batter.
  2. In a medium bowl, combine all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon. Create a well in the center and add the egg (or flax egg), followed by milk. Stir until smooth.
  3. Pour enough vegetable oil into a deep frying pot—about 2 inches deep. Heat the oil over medium heat to reach 375°F (190°C).
  4. Dip each pineapple slice into the batter, ensuring it’s fully coated, then transfer to the hot oil.
  5. Carefully drop the coated pineapple rings into the hot oil, frying them for approximately 2 minutes on each side until golden brown.
