- Start by cleaning the fresh squid; remove the quill and ink sac, rinse under cold water, and pat dry with paper towels.
- In a mixing bowl, whisk together extra virgin olive oil, freshly squeezed lemon juice, minced garlic, dried oregano, sea salt, and freshly ground pepper.
- Get your grill ready by preheating it to medium-high heat (around 400°F / 200°C). Thread the cleaned squid onto skewers.
- Grill the skewered squid directly over the heat for about 2-3 minutes on each side until lightly charred and opaque.
- Remove the squid from the skewers and place them on a serving platter. Drizzle with the prepared Ladolemono sauce.
