Step-by-Step Instructions
  1. Start by cleaning the fresh squid; remove the quill and ink sac, rinse under cold water, and pat dry with paper towels.
  2. In a mixing bowl, whisk together extra virgin olive oil, freshly squeezed lemon juice, minced garlic, dried oregano, sea salt, and freshly ground pepper.
  3. Get your grill ready by preheating it to medium-high heat (around 400°F / 200°C). Thread the cleaned squid onto skewers.
