  • 1 medium Avocado Diced, added before serving
  • 1 medium Jalapeño Optional, adjust to taste
For the Vinaigrette
  • 1/4 cup Lime Juice Freshly squeezed
  • 2 tablespoons Honey Can substitute with agave or maple syrup
  • 1 to taste Salt & Black Pepper For seasoning

Method
 

Preparation Steps
  1. Begin by cooking the fresh sweet corn to unlock its natural sweetness by boiling or grilling.
  2. Chop the peaches, mince the red onion, and chop the cilantro and jalapeño.
  3. In a small bowl, whisk together lime juice and honey until well combined.
  4. Combine all salad ingredients in a bowl, pour the vinaigrette over, and mix gently.
  5. Chill in the refrigerator for 20 minutes to allow flavors to meld.
  6. Just before serving, dice the avocado and mix in or top each serving.
