  • 1 head Romaine Lettuce Chopped into bite-sized pieces
  • 2 cups Fresh Strawberries Sliced, ripe, medium-sized
  • 1 cup Pecans Chopped, optional to replace with walnuts or almonds
  • 1 cup Dried Cranberries Chopped, optional
  • 1 cup Feta Cheese Crumble, or substitute with goat cheese
For the Dressing
  • 1/2 cup Extra-Virgin Olive Oil Can substitute with avocado oil
  • 1 each Lemon Juice & Zest Freshly squeezed
  • 1 tablespoon Dijon Mustard Can substitute with honey mustard
  • 1 tablespoon Maple Syrup Can substitute with agave syrup
  • to taste Salt & Pepper For seasoning

Method
 

Preparation
  1. Wash the romaine lettuce and pat it dry. Chop it into bite-sized pieces and place in a mixing bowl.
  2. Slice the strawberries and set aside. Chop the pecans and cranberries if using.
Assembling the Salad
  1. In the mixing bowl, fold in the sliced strawberries, chopped pecans, dried cranberries, and crumbled feta cheese.
  2. Toss gently to combine the ingredients without bruising the strawberries.
Making the Dressing
  1. In a food processor or jar, combine olive oil, lemon juice, lemon zest, Dijon mustard, maple syrup, and a pinch of salt and pepper. Blend until smooth.
Dressing the Salad
  1. Just before serving, drizzle the dressing over the salad and toss lightly to coat the ingredients.
Serving
  1. Transfer the salad to a platter or individual bowls and serve immediately.
