Step-by-Step Instructions
  1. In a food processor, combine 1 ½ cups of frozen peas, optional pea shoots, ⅓ cup of grated Parmesan cheese, 3 tablespoons of olive oil, the juice of half a lemon, half a clove of garlic, and a pinch of salt and pepper. Pulse the mixture until it forms a rough paste, about 30 seconds. Set aside.
  2. Preheat your broiler to high. Slice ciabatta bread into ½-inch thick pieces and arrange them on a baking sheet. Drizzle each slice with olive oil. Broil for 2-3 minutes per side until golden brown and crisp.
  3. Once the bread is toasted, rub the remaining half clove of garlic across each bread slice to infuse it with flavor.
  4. Spread the pea topping generously onto each slice of toasted ciabatta, ensuring every bite is flavorful.
  5. Garnish with more grated Parmesan, lemon zest, and optional pea shoots. Drizzle with olive oil and finish with cracked black pepper. Serve immediately.
