Step-by-Step Instructions
  1. In a mixing bowl, combine 1 cup of all-purpose flour, 2 teaspoons of baking powder, 1 teaspoon of ground cinnamon, and a pinch of salt.
  2. In a separate bowl, whisk together 1 cup of plain yogurt, 1/2 cup of milk, 1 large egg, 2 tablespoons of sugar, and 2 tablespoons of vegetable oil until smooth.
  3. Gently fold in one grated large apple into the wet mixture until evenly distributed.
  4. Gradually pour the wet mixture into the bowl with the dry ingredients. Fold gently until just combined, leaving a few lumps.
  5. Preheat a non-stick skillet over medium heat and lightly grease with vegetable oil. Ladle about 1/4 cup of batter for each pancake.
  6. Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
