Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and equipment.
  2. In a large mixing bowl, toss the chicken, broccoli, bell peppers, carrots, and red onion. Drizzle with olive oil and add garlic powder, Italian seasoning, salt, and pepper. Mix well.
  3. Spread the mixture into a baking dish and bake for about 20 minutes until chicken is cooked and vegetables are tender.
  4. Remove from the oven and sprinkle mozzarella and Parmesan cheese over the top. Return to the oven and bake for an additional 10 minutes until cheese is melted and bubbly.
