Step-by-Step Instructions for Easter Birds Nest Cookies
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together 1 ½ cups of all-purpose flour, ½ cup of cocoa powder, and ¼ teaspoon of salt until well combined.
  3. In a large mixing bowl, cream together ½ cup of softened unsalted butter, ½ cup of granulated sugar, and ½ cup of brown sugar for about 2-3 minutes. Blend in 1 egg and 1 teaspoon of vanilla extract, then gradually incorporate the dry mixture until a soft dough forms.
  4. Form small disks about 1 inch thick from the cookie dough and place them evenly spaced on the prepared baking sheet.
  5. Bake in your preheated oven for 10-12 minutes. Allow them to cool on the sheet for 5 minutes before transferring them to a wire rack.
  6. While cooling, melt 1 cup of milk chocolate chips and 1 tablespoon of coconut oil in a microwave-safe bowl.
  7. Gently mix in 2 cups of chow mein noodles into the melted chocolate until coated and create nests on each cooled cookie.
  8. Melt another ½ cup of chocolate and drizzle it into the hollow center of each nest. Optionally, refrigerate the cookies for a quicker setting.
