Preparation
- Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
- Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl. Press into the prepared pan and bake for 8 minutes.
- Beat softened cream cheese until smooth, then gradually add sugar, sour cream, vanilla, and flour. Mix until creamy.
- Add the eggs one at a time on low speed, mixing until incorporated after each addition.
- Gently fold in crushed sugar cookies and rainbow sprinkles.
- Pour filling over the cooled crust, smooth the top, and tap to release air bubbles.
- Bake for 50-60 minutes until edges are set but center jiggles slightly. Cool in the oven for 30 minutes.
- Chill the cheesecake in the refrigerator for at least 6 hours or overnight.
- Once chilled, top with whipped cream and garnish with sprinkles and mini sugar cookies before serving.
