Preparation

  3. Beat softened cream cheese until smooth, then gradually add sugar, sour cream, vanilla, and flour. Mix until creamy.
  4. Add the eggs one at a time on low speed, mixing until incorporated after each addition.
  5. Gently fold in crushed sugar cookies and rainbow sprinkles.
  6. Pour filling over the cooled crust, smooth the top, and tap to release air bubbles.
  7. Bake for 50-60 minutes until edges are set but center jiggles slightly. Cool in the oven for 30 minutes.
  8. Chill the cheesecake in the refrigerator for at least 6 hours or overnight.
