Method
 

Cooking Steps
  1. Marinate the Chicken: Combine chicken thighs, soy sauce, lemon juice, bay leaves, garlic, black pepper, and star anise. Let sit for at least 2 hours or overnight.
  2. Brown the Chicken: Heat oil in a pot over medium heat. Add chicken and brown on both sides for 4-5 minutes. Transfer to a plate.
  3. Sauté the Onions: In the same pot, add chopped onions and sauté for about 5 minutes until soft and golden.
  4. Prepare the Sauce: Stir in tomato sauce, reserved marinade, and oyster sauce. Cook for 2-3 minutes.
  5. Combine with Chicken: Return chicken to the pot, cover, and cook for 5 minutes.
  6. Add Water and Sugar: Pour in water, add sugar, stir, cover, and simmer on low for 10 minutes.
  7. Incorporate Potatoes: Add cubed potatoes, stir, cover, and simmer for approximately 15 minutes until tender.
  8. Add Bell Peppers: In the last 10 minutes, add bell peppers. Stir and close the lid.
  9. Serve and Enjoy: Ladle the stew into bowls and serve hot over steamed rice.
