  • 1 large Watermelon sliced into thick rounds
For the Topping
  • 2 medium Avocado ripe, diced
  • 1 medium Jalapeno thinly sliced, optional
  • 4 slices Bacon crumbled, can substitute turkey bacon
  • 1/2 cup Feta Cheese crumbled, can substitute with goat cheese
For the Dressing
  • 3 tablespoons Olive Oil
  • 3 tablespoons Honey
  • 1 large Lime juice only
  • to taste Salt
  • to taste Pepper
  • to taste Balsamic Glaze

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine 3 tablespoons each of olive oil and honey with the juice of one lime. Add salt and pepper to taste and whisk until well blended.
  2. Slice watermelon into thick rounds (about 1-1.5 inches) for the base. Place on serving platter.
  3. Cut avocados in half and scoop out the flesh. Dice and toss with salt, pepper, and a drizzle of the honey-lime vinaigrette.
  4. Layer seasoned avocado on top of watermelon slice, add jalapeno slices, followed by crumbled bacon and feta cheese.
  5. Drizzle additional honey-lime vinaigrette and balsamic glaze over the toppings, then serve immediately.
