- In a medium bowl, combine 3 tablespoons each of olive oil and honey with the juice of one lime. Add salt and pepper to taste and whisk until well blended.
- Slice watermelon into thick rounds (about 1-1.5 inches) for the base. Place on serving platter.
- Cut avocados in half and scoop out the flesh. Dice and toss with salt, pepper, and a drizzle of the honey-lime vinaigrette.
- Layer seasoned avocado on top of watermelon slice, add jalapeno slices, followed by crumbled bacon and feta cheese.
- Drizzle additional honey-lime vinaigrette and balsamic glaze over the toppings, then serve immediately.
