Preparation Steps
- In a mixing bowl, whisk together the flour, baking powder, and fine sea salt until smooth.
- In a large bowl, combine melted butter, granulated sugar, and light brown sugar. Whisk until thickened and smooth.
- Add eggs, vanilla extract, and ube extract, mixing until fully incorporated.
- Gently fold in softened ube halaya and milk until dough is uniform but slightly textured.
- Gradually fold dry mixture into wet mixture until no dry streaks remain.
- Cover the bowl tightly and refrigerate the dough for at least 30 minutes.
- Preheat oven to 350°F (175°C) and prepare a parchment-lined baking sheet.
- Portion out the chilled dough, rolling in granulated sugar and then confectioners’ sugar.
- Bake for 10-12 minutes or until puffed and tops are cracked.
