Method
 

Preparation Steps
  1. In a mixing bowl, whisk together the flour, baking powder, and fine sea salt until smooth.
  2. In a large bowl, combine melted butter, granulated sugar, and light brown sugar. Whisk until thickened and smooth.
  3. Add eggs, vanilla extract, and ube extract, mixing until fully incorporated.
  4. Gently fold in softened ube halaya and milk until dough is uniform but slightly textured.
  5. Gradually fold dry mixture into wet mixture until no dry streaks remain.
  6. Cover the bowl tightly and refrigerate the dough for at least 30 minutes.
  7. Preheat oven to 350°F (175°C) and prepare a parchment-lined baking sheet.
  8. Portion out the chilled dough, rolling in granulated sugar and then confectioners’ sugar.
  9. Bake for 10-12 minutes or until puffed and tops are cracked.
  10. Cool cookies on a wire rack completely before storing in an airtight container.
