Ingredients
  

For the Dough
  • 1 cup lukewarm water
  • 1/2 cup milk can substitute with water
  • 1 teaspoon salt
  • 3 cups all-purpose flour whole-wheat flour optional
For the Filling
  • 2 cups fresh spinach can use kale or Swiss chard
  • 1 medium onion
  • 1 teaspoon hot red pepper flakes
  • 1 teaspoon black pepper can substitute with sweet red pepper flakes
  • 1 cup Turkish white cheese or feta optional; mozzarella or goat cheese are alternatives
For Cooking
  • 1 tablespoon butter or vegetable oil for cooking

Method
 

Preparation Steps
  1. In a large mixing bowl, combine lukewarm water, milk, and salt. Gradually add flour, stirring until a shaggy dough forms. Knead for 5-7 minutes until smooth. Cover and let rest for 30 minutes.
  2. Finely chop spinach and onion. Sprinkle onion with salt and massage to release juices. Combine spinach with onions, black pepper, hot red pepper flakes, and crumbled cheese. Mix well and set aside.
  3. Divide dough into 4 pieces. Roll each into a thin disc about 12 inches in diameter. Keep covered with a towel to prevent drying.
  4. Place filling on one half of dough disc, fold over, and seal edges. Crimp with a fork to secure. Repeat with remaining dough.
  5. Heat a large pan and add butter or oil. Cook each filled gozleme for 3-4 minutes on each side until golden and crispy.
  6. Transfer to a plate and cover with a towel to keep warm. Serve immediately with yogurt dip or salad.
