  • 0.5 cups buttermilk or milk mixed with vinegar or lemon juice
  • 1 teaspoon vanilla extract can replace with almond extract
  • 1 tablespoon red food coloring consider using a natural alternative
For the Frosting
  • 8 ounces cream cheese softened
  • 0.5 cups unsalted butter softened
  • 4 cups powdered sugar adjust for desired sweetness
  • 1 teaspoon vanilla extract can replace with almond extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or spray it with nonstick cooking spray.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, blend the sugar and vegetable oil. Add eggs one at a time, then stir in buttermilk, vanilla extract, and red food coloring.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Spoon the batter into prepared muffin cups, filling them about two-thirds full. Bake for 15-18 minutes.
  6. Remove from oven and cool in the tin for 5 minutes, then transfer to a wire rack. Frost with cream cheese frosting once cooled.
