Preparation
- Preheat your oven to 350°F (175°C).
- Carefully slice the bell peppers in half and remove the seeds and membranes.
- In a skillet over medium heat, add a splash of olive oil and heat.
- Add the finely diced onion, sautéing until translucent, about 4-5 minutes.
- Add the minced garlic and cook for about 1 minute until fragrant.
- Pour in the chicken broth and bring to a gentle simmer.
- Lower the heat and mix in the softened cream cheese, Parmesan, and Monterey Jack cheeses.
- Sprinkle in salt, black pepper, parsley, Italian seasoning, smoked paprika, lemon juice, and optional red chili flakes.
- Gently fold in jalapeños, artichoke hearts, spinach, and shredded chicken.
- Fill each bell pepper half with the creamy filling.
- Bake in the preheated oven for 15 minutes.
- After 15 minutes, sprinkle the remaining Monterey Jack cheese on top and bake for an additional 2-3 minutes.
- Allow the stuffed peppers to rest for 2-3 minutes before serving.
