Method
 

Step-by-Step Instructions for Frog Jam
  1. Wash fresh ripe figs thoroughly and chop into ½-inch pieces.
  2. Zest the navel orange and juice it.
  3. Grate a piece of fresh ginger and set aside.
  4. In a large pot, combine prepared figs and raspberries, mashing them lightly.
  5. Add orange zest, juice, and grated ginger; stir thoroughly.
  6. Gradually stir in granulated sugar over low heat until dissolved.
  7. Bring mixture to a boil over medium-high heat, stirring constantly for 1 minute.
  8. Stir in lemon juice and liquid fruit pectin quickly, boil for another minute.
  9. Test set point using a chilled plate.
  10. Skim off any foam from the surface.
  11. Sterilize jars in hot water for 10 minutes.
  12. Fill jars with hot jam to ¼-inch from the top and wipe rims clean before capping.
  13. Process filled jars in a boiling water bath for 10 minutes.
  14. Cool jars for 24 hours without disturbance and check seals after.
