Preparation Steps
- Preheat the oven to 375°F (190°C). Gather all your ingredients.

- In a large skillet over medium-high heat, brown the ground beef and onion for 5-7 minutes. Drain excess fat.

- Add garlic and red bell pepper; cook for 3-4 minutes. Stir in the diced tomatoes, half creamed corn, half whole kernel corn, and spices. Simmer for 2-3 minutes.

- In a mixing bowl, combine corn muffin mix, eggs, milk, and remaining creamed and whole kernel corn. Stir until smooth.

- Grease a 9x13-inch baking dish and pour half of the cornbread batter. Layer the meat mixture, sprinkle with cheese, and top with remaining batter.

- Bake in the preheated oven for 40-45 minutes until the top is golden brown and a toothpick comes out clean.

- Let the casserole cool for 10 minutes before serving.
