Step-by-Step Instructions
  1. Line a rimmed baking sheet with parchment paper and scatter the chopped almonds.
  2. In a heavy saucepan over medium heat, combine unsalted butter, granulated sugar, light brown sugar, water, and light corn syrup.
  3. Continue cooking the mixture over medium heat, stirring continuously, until it reaches a hard crack stage at 300°F.
  4. Remove from heat and stir in the vanilla extract.
  5. Pour the toffee mixture over the almonds and spread evenly.
  6. Let the toffee cool at room temperature for 30-45 minutes.
  7. Melt the white chocolate melting wafers in a microwave-safe bowl.
  8. Spread the melted chocolate over the cooled toffee and sprinkle with cinnamon sugar.
  9. Allow the chocolate to set completely, then cut into pieces.
