  • 3 medium Bananas ripe bananas work best
  • 1 cup Peanut Butter or almond butter
  • 1 cup Greek Yogurt plain yogurt can be used
  • 2 large Eggs or flax eggs for vegan
  • 1/2 cup Cottage Cheese or ricotta cheese
  • 1 cup Oats gluten-free oats for gluten-free version
  • 1/4 cup Cocoa Powder carob powder as a substitute
  • 1 cup Blueberries fresh or frozen
  • 1/2 cup Pumpkin Puree or mashed sweet potato
  • 1 medium Carrots or zucchini as an alternative
For the Topping
  • 1/2 cup Chopped Nuts walnuts or almonds
  • 1/2 cup Chocolate Chips dark chocolate recommended

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine ripe bananas, peanut butter, Greek yogurt, eggs, and cottage cheese in a large mixing bowl. Mix until smooth.
  3. Gently stir in oats, cocoa powder, and any desired add-ins until just combined.
  4. Fill each muffin cup about three-quarters full with the batter.
  5. Bake for 15-20 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 5 minutes before transferring the muffins to a wire rack.
