Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, toss halved or quartered fresh strawberries with honey, balsamic vinegar, and salt. Spread the strawberries evenly on a baking sheet lined with parchment paper.
  3. Place the baking sheet in the preheated oven and roast strawberries for 15-20 minutes until soft and caramelized.
  4. In a medium bowl, combine ricotta cheese with olive oil and a pinch of salt. Whip until smooth and creamy, about 2-3 minutes.
  5. Slice your crusty bread into thick slices and lightly brush with olive oil. Toast in a skillet or toaster until golden brown and crisp, about 3-5 minutes.
  6. Spread a generous layer of whipped ricotta atop each slice of toasted bread.
  7. Remove roasted strawberries from the oven and pile them on top of the whipped ricotta toast. Drizzle additional honey if desired.
  8. Sprinkle fresh thyme leaves and a dash of black pepper over the toast before serving.
