Step-by-Step Instructions
- Begin by washing and peeling the medium potatoes. Cut them into evenly sized fries for uniform cooking. Soak the cut fries in a bowl of cold water for 30 minutes.
- Heat oil in a deep fryer or a heavy pot to 350°F (175°C). Fry the soaked fries in batches for about 5-7 minutes until golden brown and crispy. Remove and drain them on paper towels.
- In a medium saucepan, melt the butter over medium heat. Whisk in the flour to create a roux, and gradually add stock while whisking until thickened (5-7 minutes).
- Layer the hot, crispy fries in a large serving dish. Sprinkle cheese curds over fries and pour the gravy on top.
- Prepare eggs according to your preference. Place them atop the poutine, allowing the warm yolks to enhance the dish.
- Serve immediately while hot, optionally garnishing with fresh herbs or hot sauce.
