Step‑by‑Step Instructions
  1. Prepare the slow cooker by spraying it with non-stick cooking spray or using a liner for easy cleanup.
  2. Place boneless chicken breasts at the bottom of the Crockpot and sprinkle the Italian seasoning evenly over the chicken.
  3. Dice the bell peppers, onion, and zucchini, and layer them on top of the chicken.
  4. Pour the diced tomatoes over the mixture and add the minced garlic; gently stir to combine everything.
  5. Cover the slow cooker and set it to cook on low for 6 to 8 hours or on high for 3 to 4 hours.
