Method
 

Directions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and dry your zucchini, then shred it, squeezing out excess moisture.
  3. In a mixing bowl, combine shredded zucchini with mozzarella, Parmesan, breadcrumbs, garlic, and herbs, seasoning with salt, pepper, and red pepper flakes.
  4. Add the egg and mix until the batter holds together.
  5. Portion the mixture into mounds on the baking sheet, flattening slightly.
  6. Brush the tops with oil and bake for 15 to 18 minutes until golden brown.
  7. Flip the bites, brush with more oil, and bake for an additional 5 to 7 minutes.
  8. For an air fryer, preheat to 375°F (190°C) and cook for 8 to 10 minutes, flipping halfway through.
  9. Let cool for 5 minutes before serving warm with your favorite dips.
