For the Pineapple
  • 1 cup Pineapple Fresh or frozen; drain frozen well.
For the Flavor
  • 3 tablespoons Soy Sauce Coconut aminos for gluten-free option.
  • 2 cloves Garlic Fresh minced preferred.
  • 1 tablespoon Ginger Fresh ginger ideal.
For the Garnish
  • 2 stalks Green Onions Chives or shallots can also be used.
For Cooking
  • 2 tablespoons Oil Canola or vegetable oil works best.

Method
 

Step-by-Step Instructions
  1. Cut the chicken breast into bite-sized pieces, season with salt and pepper, and set aside.
  2. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes until golden brown and crispy. Remove from pan.
  3. In the same pan, add more oil if needed and stir-fry the rice, garlic, and ginger for about 2 minutes.
  4. Return the seared chicken to the pan, add pineapple and soy sauce, and stir to combine.
  5. Add 2 cups of water, cover, and simmer on low for 15-20 minutes until rice is fluffy.
  6. Fluff rice with a fork, garnish with green onions, and serve hot.
