- Prepare the corn beef by crumbling it into a large mixing bowl.
- Shred and rinse the potatoes under cold water to remove excess starch, then dry.
- Mix the crumbled corned beef with shredded potatoes, grated onion, flour, and baking powder until well combined.
- Heat a skillet over medium-high heat, adding butter and olive oil until melted and shimmering.
- Scoop about 1/4 cup of the mixture into the skillet, flatten slightly, and fry for 3-4 minutes until golden brown.
- Flip the fritters and cook for another 3-4 minutes until the other side is also golden brown.
- Remove from skillet, drain on paper towels, and serve immediately.
