  • 1/2 cup Flour Swap with almond flour or coconut flour for low-carb
  • 2 Eggs Whisked until frothy
  • 1/2 cup Breadcrumbs Substitute with crushed pork rinds for low-carb
  • 1/4 cup Parmesan Cheese Grated
  • 1 tbsp Italian Seasoning Adjust to taste

Step-by-Step Instructions
  1. Prepare the coating mixtures by combining flour, salt, pepper, and Italian seasoning on a plate. Whisk the eggs in a separate bowl, and blend breadcrumbs with grated Parmesan in another bowl.
  2. Cut the zucchini into 3-inch fry shapes, aiming for even thickness for uniform cooking.
  3. Coat each zucchini fry in the flour mixture, dip in the whisked eggs, then roll in the breadcrumb and Parmesan mixture.
  4. Lightly coat the air fryer basket with cooking oil and arrange the zucchini fries in a single layer.
  5. Spray the arranged fries with cooking oil for extra crispiness.
  6. Preheat the air fryer to 400°F (200°C) and air fry the zucchini fries for about 9 minutes, checking halfway for even cooking.
  7. Serve the zucchini fries hot, paired with marinara sauce or yogurt dip.
