- Begin by bringing a pot of water to a rolling boil. Gently add the 4 large eggs and cook for 6-7 minutes for a soft-boiled texture. Once done, quickly transfer the eggs to an ice bath for at least 5 minutes to stop the cooking process.
- While the eggs cool, combine 1 pound of sausage meat with ½ teaspoon salt, ½ teaspoon black pepper, ½ teaspoon garlic powder, and ½ teaspoon onion powder in a large mixing bowl. Mix until well combined.
- Once the eggs are cooled and peeled, take a portion of the sausage mixture and flatten it in your palm. Place a peeled egg in the center and mold the sausage around it.
- Prepare a plate with 1 cup of breadcrumbs. Roll each sausage-wrapped egg in the breadcrumbs gently, ensuring they’re fully coated.
- Preheat your air fryer to 400°F (200°C). Lightly spray the breadcrumb-coated Scotch eggs with olive oil. Place them in the air fryer basket and cook for 12-15 minutes until golden brown.
- Once the eggs are perfectly golden, remove them from the air fryer and allow them to cool for a few minutes. Serve warm.
