- Begin by boiling lasagna noodles according to the package instructions until they are al dente, typically around 8-10 minutes. Once cooked, drain them in a colander and rinse under cold water to stop the cooking process. Lay the noodles flat on a baking sheet to cool while you prepare the filling.
- In a large mixing bowl, combine the ricotta, Parmesan, Romano, Asiago, and mozzarella cheeses along with the eggs and Italian seasoning. Mix thoroughly until you have a creamy and well-blended filling.
- Take one cooked lasagna noodle and lay it flat on a clean surface. Spread a generous layer of the cheese mixture over the noodle, then carefully roll it up tightly into a cylinder, about 2-3 inches in length. Place each rolled noodle on a tray and repeat until all noodles are filled. Freeze the assembled rolls for 1-2 hours to firm them up.
- Set up your breading station. In one bowl, beat a couple of eggs, and in another bowl, place the Italian bread crumbs or panko. Dip each lasagna roll first in the egg mixture and then roll it in the bread crumbs.
- Preheat your air fryer to 400°F (200°C). Spray the basket lightly with olive oil to prevent sticking. Place the breaded lasagna frittas in the basket, making sure they are not overlapping. Cook for 8 minutes, then flip each piece and air fry for an additional 6-8 minutes until they're golden brown and crispy.
