Ingredients
  

For the Tortellini
  • 12 oz Tortellini fresh or frozen
For the Sauce
  • 24 oz Tomato Sauce crushed or diced, seasoned with herbs
  • 1 cup Cream substitute with half-and-half or non-dairy for lighter version
For the Greens
  • 2 cups Spinach/Kale optional, adds nutrition and vibrant color
For the Protein
  • 1 cup Cooked Chicken/Shrimp optional, add right before serving

Method
 

Cook the Tortellini
  1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions, typically 3-5 minutes. Drain and set aside.
Prepare the Sauce
  1. In a skillet, heat the tomato sauce over medium heat for 2-3 minutes. Add the cream, stirring well and simmer for 3-4 minutes.
Combine Tortellini and Sauce
  1. Add the drained tortellini to the skillet, gently fold to coat. Simmer for 2-3 minutes, stirring occasionally.
Add Greens and Protein
  1. Stir in the greens and cook for about 1 minute. If using, add the cooked chicken or shrimp and mix gently for 1 additional minute.
Serve and Garnish
  1. Serve immediately, garnished with fresh herbs or grated cheese.
