  1. Begin by washing and slicing ripe peaches, then spread them evenly on a parchment-lined baking sheet. Place the baking sheet in the freezer and allow the peaches to freeze for 2-3 hours until they are solid and icy to the touch.
  2. Once the peaches are completely frozen, remove them from the freezer and transfer them to a food processor. Pulse the peaches for about 30 seconds until they reach a crumbly, snowy texture.
  3. Add plain Greek yogurt, fresh lemon juice, and raw honey to the food processor with the processed peaches. Blend the mixture on high for 1-2 minutes until it is smooth and creamy.
  4. At this point, you can serve the mixture immediately for a delightful soft-serve texture, or pour the mixture into an airtight container and freeze it for 1-2 hours for a firmer yogurt.
