For the Pasta
  • 8 ounces Linguine Can be substituted with fettuccine or spaghetti
  • 1 tablespoon Coarse or Flaky Salt For seasoning the pasta water
For the Sauce
  • 2 tablespoons Olive Oil Butter can be used as an alternative
  • 4-5 cloves Garlic Minced or pressed; may substitute with garlic powder
  • 8 ounces Cream Cheese Softened; mascarpone can add richness
  • 1/2 cup Parmesan Cheese Freshly grated preferred
  • 2-3 tablespoons Heavy Cream Use milk for a lighter sauce
  • 1 cup Pasta Water Reserve starchy liquid from cooked pasta
  • Freshly Ground Pepper To taste

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil. Add linguine and cook until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain the rest.
  2. In the same pot, heat olive oil over low heat, add minced garlic and sauté for 3-4 minutes until fragrant and lightly golden.
  3. Add softened cream cheese to the pot and let it melt into the garlic oil for 3-4 minutes, stirring until smooth.
  4. Whisk in Parmesan cheese, heavy cream, and reserved pasta water until the mixture is creamy and emulsified, about 2-3 minutes.
  5. Add the drained linguine to the sauce, tossing gently to coat. Adjust consistency with reserved pasta water if needed.
  6. Taste and adjust seasoning with salt and pepper before serving. Garnish with extra Parmesan and pepper.
