  • 1/2 tsp Ground Turmeric Optional for earthy undertones and color.
  • 1/2 tsp Dried Rosemary Optional; swap in oregano or basil.

Step‑by‑Step Instructions for Easy Sweet Potato Soup
  1. Sauté the Vegetables: In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 2 lbs of diced sweet potatoes, 1 cup of diced carrots, and ½ cup of diced onion. Sauté for about 10 minutes, until the sweet potatoes are lightly browned and the onion is translucent.
  2. Add Aromatics and Stock: Stir in 1 tablespoon of minced garlic and cook for an additional minute. Then, add 4 cups of vegetable stock, ¼ teaspoon of black pepper, ¼ teaspoon of salt, ½ teaspoon of paprika, and ground cinnamon. Bring to a boil, then reduce heat to low and simmer for 30-40 minutes.
