Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1 chopped yellow onion, 2 minced garlic cloves, and 1 tablespoon of chopped fresh rosemary. Sauté for about 2 minutes until the onion is softened and fragrant.
  2. Stir in 2 tablespoons of tomato paste into the skillet and let it cook for an additional minute.
  3. Add 1 pound of lean ground beef, breaking it apart as it cooks for about 5-7 minutes until browned.
  4. Stir in 2 cups of tubetti pasta, 2 cups of vegetable or beef broth, and enough water to cover the pasta by an inch. Bring to a boil and reduce to a simmer.
  5. Cook the pasta for about 12-14 minutes, stirring frequently.
  6. In the last 2 minutes of cooking, stir in 1 cup of pumpkin purée and 1/2 cup of mascarpone cheese. Season to taste with sea salt and black pepper.
