For the Steak
  • 1 pound Steak (Sirloin or Ribeye) flank or skirt steak also works
For the Vegetables
  • 4 ounces Carrots cut into uniform sticks
For Cooking
  • 2 tablespoons Olive Oil any high-smoke-point oil can be substituted
  • 4 tablespoons Butter reduce slightly for a lighter version
  • 4 cloves Garlic fresh, minced
For the Sauce
  • 2 tablespoons Lemon Juice fresh is ideal
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/4 teaspoon Crushed Red Pepper Flakes optional, adjust for spice tolerance
  • 1 teaspoon Dijon Mustard can omit for milder flavor
  • to taste Salt
  • to taste Black Pepper
For Garnish
  • 1/2 cup Parmesan Cheese can substitute with Pecorino Romano
  • 1/4 cup Fresh Parsley finely chopped

Method
 

Cooking Steps
  1. Preheat your oven to 425°F (220°C). Toss the carrot sticks with olive oil, salt, and pepper, and roast for 15-20 minutes until tender.
  2. Boil a pot of salted water, then cook the linguine according to package instructions for 8-10 minutes. Reserve some pasta water before draining.
  3. Sear the seasoned steak in a skillet with olive oil for 2-3 minutes on each side. Let it rest before slicing.
  4. In the same skillet, melt butter, add minced garlic, lemon juice, and Dijon mustard, and mix well to create the Cowboy Butter Sauce.
  5. Combine the drained linguine with the Cowboy Butter Sauce, add sliced steak and roasted carrots, using reserved pasta water if needed.
  6. Garnish with Parmesan cheese and parsley before serving. Enjoy your meal!
