Step-by-Step Instructions for Cottage Cheese Alfredo
  1. Bring a large pot of salted water to a boil. Add fettuccine and cook according to package instructions, around 8-10 minutes, until al dente. Drain and set aside.
  2. In a medium bowl, combine minced garlic and butter. Microwave for 30-45 seconds until butter is melted and garlic is aromatic.
  3. In a blender, add cottage cheese, melted garlic and butter, grated Parmesan, and milk. Blend on high for 1-2 minutes until smooth.
  4. Taste the sauce and adjust seasoning with ground black pepper and salt. Blend briefly to mix.
  5. Pour the sauce over the drained pasta and toss gently with tongs until coated.
  6. Serve the pasta on plates, garnished with additional Parmesan and chopped parsley.
