Ingredients
  

For the Pasta Base
  • 8 ounces Pasta penne or fusilli work wonderfully.
For the Freshness
  • 1 cup Cherry Tomatoes halved
  • 8 ounces Fresh Mozzarella can substitute with feta or dairy-free cheese
  • 1 cup Basil freshly torn leaves
For the Dressing
  • 3 tablespoons Olive Oil high-quality extra virgin
  • 2 tablespoons Balsamic Vinegar
For the Protein
  • 1 cup Chicken grilled and chopped
  • 1 cup Chickpeas canned, drained and rinsed

Method
 

Steps to Prepare
  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, 8-10 minutes. Drain and let cool slightly.
  2. While pasta cooks, wash and chop the cherry tomatoes in half and tear the basil leaves.
  3. Once cooled, return pasta to the pot and drizzle with olive oil, tossing gently.
  4. Combine the pasta with cherry tomatoes, mozzarella, basil, and your choice of chicken or chickpeas.
  5. Drizzle balsamic vinegar over the salad and adjust seasoning with salt and pepper.
  6. Cover and let the salad rest for at least 30 minutes to meld flavors.
