Step-by-Step Instructions for Chicken Fried Rice
  1. Whisk together eggs, soy sauce, and white pepper. Heat 1 tablespoon of oil and cook the egg mixture for 2 minutes until set.
  2. In the same skillet, heat another ½ tablespoon of oil, sauté garlic, ginger, and white scallion parts for 1-2 minutes.
  3. Add frozen peas and carrots, cooking for 2-3 minutes until heated through.
  4. Stir in day-old jasmine rice, breaking clumps and toasting for 3-4 minutes.
  5. Drizzle soy sauce, oyster sauce, and sesame oil, mixing thoroughly and cooking for 2 more minutes.
  6. Fold in cooked chicken and scrambled eggs, stirring for 2 minutes until heated through.
  7. Adjust seasoning and garnish with green scallion tops before serving.
