- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Grate the fresh zucchinis and place them in a kitchen towel. Squeeze out the moisture thoroughly.
- In a mixing bowl, combine the squeezed zucchini, mozzarella, Parmesan, eggs, garlic powder, Italian seasoning, salt, and pepper.
- Spread the mixture evenly onto the baking sheet, forming a thin rectangle, about 1/2 inch thick. Bake for 20-25 minutes.
- Remove from the oven and sprinkle the remaining mozzarella cheese on top. Return to the oven for another 5-7 minutes until melted.
- Let cool for 5 minutes, then slice into desired shapes and serve warm with dipping sauces.
