Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly coat mini muffin pans with non-stick spray.
  2. Blend the tapioca flour, whole milk, eggs, vegetable oil, cheddar cheese, mozzarella cheese, salt, and garlic powder in a high-speed blender until smooth.
  3. Pour the batter into the prepared mini muffin pans, filling them about three-quarters full.
  4. Bake for 19-20 minutes until the tops are golden brown and puffed.
  5. Let the Pão de Queijo cool in the pans for 5 minutes before transferring to a wire rack.
  6. Serve warm or store in an airtight container.
