- Wash strawberries gently under cold water and pat them dry. Hollow out the centers of each strawberry using a melon baller or small spoon.
- In a mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Blend until smooth and creamy. Transfer the filling to a piping bag.
- After filling the strawberries, cover them with plastic wrap and chill in the refrigerator for at least 30 minutes.
- Melt semi-sweet chocolate chips and heavy cream in a microwave-safe bowl, stirring every 20 seconds until smooth.
- Dip each chilled strawberry into the melted chocolate and place them upside down on a parchment-lined baking tray.
- Add optional toppings while the chocolate is still wet. Be creative!
- Chill the strawberries for about 15 minutes until the chocolate is set.
