  • 2 tablespoons Extra Virgin Olive Oil can substitute with neutral oil
  • 1 teaspoon Smoked Paprika or regular paprika for a milder flavor
  • 1/2 teaspoon Chili Flakes adjust for desired spice level
  • 1/2 teaspoon Fennel Seeds omit if unavailable
  • 1/2 teaspoon Mustard Seeds optional
  • 1 teaspoon Onion Powder or fresh onion
  • 1 teaspoon Garlic Powder or fresh garlic
For the Toppings
  • 1 cup Shallots or red onions
  • 1 package Pizza Dough store-bought or homemade
  • 1 cup Marinara Sauce your favorite brand
  • 1 cup Shredded Mozzarella Cheese or dairy-free cheese
  • 1/2 cup Shredded Provolone Cheese additional mozzarella can replace
  • 1/4 cup Grated Parmesan Cheese use nutritional yeast for vegan

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Process the cauliflower in a food processor until it resembles rice grains.
  3. Microwave the processed cauliflower in a bowl covered on high for 5 minutes.
  4. Squeeze out excess moisture using a kitchen towel.
  5. Combine squeezed cauliflower with olive oil, smoked paprika, chili flakes, fennel seeds, mustard seeds, onion powder, and garlic powder in a bowl.
  6. Spread the cauliflower mixture onto a parchment-lined baking sheet to form a crust about 1/2 inch thick.
  7. Bake the crust for 25-30 minutes until golden brown and firm.
  8. Sauté sliced shallots in olive oil until golden brown.
  9. After baking, spread marinara sauce on the crust and layer with mozzarella, provolone, sautéed shallots, and parmesan.
  10. Return the pizza to the oven and bake for another 10-15 minutes until the cheese is bubbly and golden.
  11. Allow the pizza to cool briefly before slicing and serving warm.
