Step-by-Step Instructions for Brookies Cookies
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together unsalted butter with light brown and granulated sugars until fluffy, about 2-3 minutes. Add one egg and vanilla extract, mixing until combined. Fold in the dry ingredients and chocolate chips.
- In another bowl, cream cold unsalted butter with the remaining sugars until fluffy. Add the egg and yolk, and mix. Whisk together the dry ingredients, then add to the wet mixture and fold in chocolate chips.
- Form equal-sized balls from both doughs and gently press them together.
- Place the dough balls on the prepared baking sheets and bake for 8-9 minutes until edges are set and centers are slightly puffy.
- Cool the cookies on the sheets for 5 minutes before transferring to a wire rack. Optionally sprinkle with flaky sea salt while warm.
