  • 2 tablespoons Honey maple syrup is a vegan alternative
  • 2 tablespoons Balsamic Vinegar apple cider vinegar can be used
  • 1 teaspoon Dijon Mustard
  • 1/2 teaspoon Salt to taste

For the Extras
  • 1/2 cup Crumbled Feta Cheese goat cheese works well too
  • 1/4 cup Red Onion, thinly sliced use a milder onion if desired

Method
 

Preparation Steps
  1. Wash and dry the mixed salad greens thoroughly.
  2. Gently rinse the fresh blueberries under cold water and allow them to drain.
  3. Roughly chop the shelled pistachios and sprinkle over the salad greens.
  4. Crumble the feta cheese into the salad bowl and add the sliced red onion.
  5. In a separate bowl, whisk together the olive oil, honey, balsamic vinegar, Dijon mustard, salt, and pepper.
  6. Pour the dressing over the salad and gently toss to combine.
  7. Taste and adjust seasoning if necessary, then garnish with whole blueberries and pistachios.
  8. Serve immediately for the best experience.
