Muffin Base
  • 3 medium Ripe bananas The riper, the sweeter.
  • ½ cup Peanut butter Creamy or chunky.
  • 1 cup Oats Provides fiber.
  • 2 large Eggs Bind ingredients together.
  • ¼ cup Honey or maple syrup Adjust to taste.
  • 1 teaspoon Baking powder For rising.
Optional Mix-Ins
  • 1 cup Chocolate chips For indulgence.
  • ½ cup Chopped nuts Almonds or walnuts.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Line muffin tin with parchment paper or grease lightly.
  2. In a mixing bowl, peel and mash about 2-3 ripe bananas until smooth.
  3. Add ½ cup of peanut butter and ¼ cup of honey (or maple syrup) to the mashed bananas. Whisk until smooth.
  4. Combine 1 cup of oats and 1 teaspoon of baking powder in a separate bowl. Gradually fold into the wet mixture.
  5. Add 2 eggs to the batter and mix until fully incorporated. Add any optional mix-ins if desired.
  6. Scoop the batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
  8. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.
