Method
 

Step-by-Step Instructions
  1. Preheat your oven to 190°C (375°F). Grease each hole of the mini muffin tray with coconut oil or butter.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Crack the eggs into the bowl with the mashed bananas and mix vigorously until combined.
  4. Place 2-3 berries at the bottom of each muffin hole.
  5. Pour the banana and egg mixture into each muffin hole, filling just below the top.
  6. Bake in the preheated oven for about 15 minutes until lightly golden on top.
  7. Allow the muffins to cool for a few minutes before removing them from the tray.
