- Bring a large pot of salted water to a boil and cook the ziti pasta according to package instructions, about 8-10 minutes, until al dente. Drain and set aside.
- In a skillet, heat olive oil and add marinara sauce with Italian seasoning. If using, add ground turkey and cook for 5-7 minutes until browned.
- In a bowl, mix ricotta cheese with chopped spinach or zucchini until creamy. Fold this mixture into the sauce.
- Combine cooked ziti with the sauce in the skillet, stirring until well coated. Preheat oven to 375°F (190°C).
- Transfer to a greased baking dish, sprinkle mozzarella cheese on top, and optionally add a dash of Italian seasoning.
- Bake in the oven for 20-25 minutes until the cheese is bubbling and golden brown. Let cool slightly before serving.
- Serve warm with fresh herbs if desired.
