Method
 

Preparation Steps
  1. Wash and chop vegetables: dice zucchini, bell pepper, and onion, and slice mushrooms. Mince garlic.
  2. Heat olive oil in an Instant Pot; sauté onion and garlic for 3-4 minutes.
  3. Add zucchini, bell pepper, and mushrooms. Cook for 5-7 minutes.
  4. Pour in tomato sauce, Italian seasoning, salt, and black pepper. Stir to combine.
  5. Sprinkle cheese over the vegetable mixture.
  6. Seal Instant Pot and cook on high pressure for 10 minutes or bake at 350°F for 25-30 minutes.
  7. Allow to cool for 5 minutes before serving.
