Method
 

Step-by-Step Instructions
  1. Start by washing the Roma tomatoes and dicing them into small, even pieces.
  2. Peel and finely chop the white onion.
  3. If you like a spicy kick, take the jalapeño pepper, slice it open, remove seeds and mince it finely.
  4. In a medium bowl, combine the diced tomatoes, chopped onion, and minced jalapeño.
  5. Add chopped fresh cilantro and stir all the ingredients together.
  6. Squeeze the juice of fresh limes over the mixture and add salt and black pepper to taste.
  7. Cover the bowl and refrigerate for at least 1 hour to let the flavors meld.
  8. Adjust seasoning if necessary and serve immediately with tortilla chips or as a topping for tacos.
